Cheesy Potato Gratin Recipe – perfect for a big breakfast or brunch

I love potato, I love cheese therefore potato gratin is ideal for me and I am sure you will find it just as yummy as I do.

Potato gratin is perfect for a big gathering at meal times as it can be made just as easily in large quantities as in smaller. Make this as the main attraction or have it on the side as a complement dish, either way you will want to lick your plate for more!

Serves: 4 as main course or 6 if eaten as a side dish.

Ingredients:

  • 7 small gold potatoes, peeled and cut into 1/4 inch slices.
  • 3/4 yellow onion, peeled and thinly sliced.
  • 12oz grated cheese, mixed flavors as desired.
  • 1 cup of heavy whipping cream.
  • Green Indian chili, optional. Use as much as you like depending on how spicy you like your food. Keep the chili seeds in for extra hotness!
  • Water, for boiling the potatoes.
  • Salt and pepper to taste, as optional.

Method:

  1. Combine potatoes and onions in a large saucepan, add enough tap water to cover the mix and bring to the boil on a medium to high heat. Reduce heat and simmer until potatoes are tender.
  2. Drain potato and onion mix.
  3. Preheat oven to 400ºF.
  4. Arrange half of the potato mixture in a glass baking dish and sprinkle on half of the salt, pepper and chili you wish to use.
  5. Sprinkle on nine ounces of the cheese blend.
  6. Arrange the remaining potato mixture on top and pour the whipping cream over the potatoes.
  7. Sprinkle on the remaining salt, pepper and chili you are using.
  8. Sprinkle remaining three ounces of cheese on top.
  9. Bake uncovered for 25 minutes. The cream should thicken and the top layer of cheese should turn a crispy golden brown color. If the cheese remains light, you can broil the gratin for a further few minutes until it has reached the desired color.

Serve in the baking dish and let everyone help themselves, family style!

Simple to make, filling to get your day going and absolutely heavenly to eat.

Quesadillas w/ Black Bean Mix & Spinach

Mexican dishes are one of my favorites, the spice mixed into the fresh vegetables are so delicious and they are perfect for big family gatherings as well as relaxed dinners for two!

Makes: 6 individual quesadillas which can be cut into 3 separate pieces.

Ingredients:

  • 1 tablespoon of olive oil
  • 1/2 medium red onion, diced
  • 3 cups of chopped spinach, I used frozen this time and defrosted it in the microwave a few minutes before making the black bean mix
  • 1 can (15 oz) of black beans, drained and roughly rinsed
  • 1 large red jalapeño (I used red for the color as it brightens up the mix), cut off stem, de-seed, take out ribs and roughly chop
  • 1 small green Indian chili, cut off stem, de-seed and finely chop
  • 6 whole wheat soft tortillas , medium sized
  • 2 cups of grated Tillamook pepper jack cheese, you can use more if desired however for a slightly healthier option try and go light on the cheese in this recipe

Method:

  1. Heat oil over a medium heat in a large skillet and saute the onions until the color starts to appear golden.
  2. Add the defrosted spinach and mix together, let them heat together for five minutes.
  3. Add the black beans, red jalapeño, green chili and mix together. Let everything heat up but be careful nothing burns. Once ready take off heat and cover with a lid/plate.
  4. On a large skillet /tava warm tortilla on both sides, do not overheat as you want them to be able to fold over without cracking. Depending on your skillet/tava you may need to use a little oil to prevent sticking*.
  5. Once warmed begin layering; on one half of the tortilla sprinkle cheese, then bean mix, a little more cheese and then fold the empty side of the tortilla over and press gently. Cook until cheese melts and/or tortilla turns golden brown. Remove from heat and place in pre-heated, switched off, oven to keep warm or if you cannot wait just start eating!
  6. When ready to eat cut each quesadilla into three pieces and serve with a side of fresh tomato salsa and spicy guacamole.

* Invest in an Indian tava as you will not need to use extra oil/cooking spray when heating tortillas or making rotis/chapatis.

Macaroni Cheese Bake, healthy mac with three flavored cheese!

Balance the indulgent three flavored cheese factor with healthy macaroni and eat guilt free!

Serves: 4

Ingredients:

Method:

  • Cook macaroni as instructed on packaging.
  • When macaroni is cooked, in a small saucepan melt the margarine on a very low heat.
  • Once the margarine has melted add the flour, salt and paprika and stir well until throughly mixed in. The mixture will become paste like and appear to shrink.
  • Add the milk and keep stirring over low heat until the mixture becomes thick. It may take a few minutes for everything to combine but do not stop stirring until the sauce thickens and the color darkens.
  • Turn off heat and add the already cooked macaroni. Mix so the sauce covers all the macaroni and leave in saucepan while you prepare the baking dish.
  • Use six of the slices to cover the bottom of the baking dish in whichever flavor you desire.
  • Pour half the macaroni sauce mix into the baking dish and cover the layer with the remaining cheese slices.
  • Pour the remaining macaroni sauce mix into the dish and cover with the grated cheese so you cannot see anything underneath.
  • Bake in a preheated oven at 350 degrees F for 20 – 25 minutes, or until top layer of cheese has turned golden brown.

A yummy filling dish simple to make for those nights in with family and friends! Impress with ease 🙂
