Cous Cous w/ Kidney Beans

This dish is excellent for those wanting more protein and less carbs in their diet.

It is healthy, light and easy to put together!

Serves: 2


  • 1/4 large yellow onion, chopped into small pieces
  • 1 tablespoon of olive oil
  • salt, to taste
  • 2 small green Indian chili’s, finely chopped
  • 2 cloves of garlic, thinly sliced
  • 7 oz (1/2 can) canned tomato sauce
  • 1/2 cup of water
  • 15.25 oz (1 can) canned kidney beans, drained and rinsed
  • 1 cup of whole wheat cous cous


  1. Warm the olive oil in a saucepan and add the chopped onions.
  2. Let the onions cook until they become slightly translucent and add the chili, salt and garlic. Mix together, making sure you don’t let anything burn and stick to the saucepan.
  3. Once the majority of onions begin to brown and the garlic turns golden add the tomato sauce, stir and let simmer for five minutes.
  4. Add the water and drained kidney beans, mix gently and let simmer for a further five minutes.
  5. While the kidney beans are simmering make the cous cous as instructed on the packet.

~ When cous cous is done you are ready to serve and enjoy!

* Serve with a side salad to get your daily dose of greens.
