When you have little time in your schedule to do all your daily tasks; work, play and rest sometimes the last thing you might want to do is cook. However if you spend 30 minutes making this super easy healthy bite size stomach filler you’ll be thankful later.

You have nuts, fruit, and a sweet treat rolled into one. Try one of these for breakfast and you’ll have the fuel to keep you going for hours. Great for those wanting to get fitter for the summer season.

Makes: 35 servings/individual balls

Ingredients:

Method:

  1. Combine walnuts, dates, sesame seeds and lemon juice in a food processor and blend until a moist sticky mixture is formed.
  2. Spread out coconut flakes on a flat tray, rolling board or plate.
  3. Using a teaspoon measure out the nutty lemon mixture and, with a little water to dampen hands, roll into individual balls.
  4. Roll each ball in the coconut flakes, place on tray/plate and chill in fridge to set until hungry.

*Keep stored in refrigerator for best quality. Best served chilled.
