Pasta w/ Avocado, Spinach & Sweet Peppers

This is a delicious lunch or dinner option for pasta lovers who are looking for something quick and simple to make.

Serves: 2

Time for prep and cooking takes: 20 -25 minutes.

Ingredients:

  • 1/2 lb or 227g mini farfalle pasta
  • Salt, to taste, for the pasta
  • 1 tablespoon of olive oil for pasta
  • 1 tablespoon of chili garlic oil
  • 1 large avocado, stoned and scooped out
  • 2 small sweet peppers, seeded and sliced to bite sized pieces
  • 1 1/2 cups of frozen chopped spinach

Method:

  1. Cook pasta as instructed on packet, add salt and olive oil to water whilst pasta is cooking. Once cooked drain and let pasta cool to one side.
  2. Whilst pasta cools, heat chili garlic oil in a medium sized saucepan.
  3. Add sweet peppers and frozen chopped spinach.
  4. Let peppers brown slightly and spinach cook through.
  5. In the meantime add the scooped out avocado to the pasta, do not mix in simply let it sit on top of the pasta.
  6. Once peppers and spinach are ready add the pasta with the avocado and mix gently. Add more chili garlic oil if desired.

Serve and enjoy!
